Spencer's at the Waterfront
Located in an award-winning landmark building by Baird Sampson Neuert Architects, Spencer’s on the Waterfront has been a signature restaurant in downtown Burlington for the last decade. The property is well-known for its ship-shaped observatory encased with 30 foot, floor-to-ceiling windows that overlook Burlington’s parklands and waterfront. As part of the restaurant’s 10-year anniversary, Pearle Hospitality refreshed Spencer’s brand to focus on fresh seafood with a changing menu that includes a daily fish market and seasonal shareable plates. The hospitality group also hired Toronto design firm Audax to give the restaurant a dynamic new look and feel. Taking inspiration from the new culinary direction and the iconic waterfront property, Audax updated the interiors of the restaurant with a modern nautical theme and introduced a colour palette of blues, whites, oranges and elegant brass tones. Audax also redesigned the layout of the restaurant to create intimate seating zones and a distinguished bar area for informal gatherings. The entire floor plan was reorganized to maximize picture perfect waterfront views for guests while optimizing Spencer’s hospitality and restaurant operations. To help accentuate the restaurant’s main entry from the street, Audax designed a new main entrance while still respecting the architecture of the existing building. The new expanded entryway provides the restaurant with a new spacious foyer and a dedicated hostess station. A solarium for private dining was added to the rear of the building. The solarium extension features floor-to-ceiling windows on three sides and private bar access.
